It's a...Fern, How is your echinacea doing now? It's a must in my herb garden. Not only can you make an excellent tea it's wonderful in tincture form and will last nearly indefinitely that way. Lemon Balm and chamomile are very relaxing and excellent in teas. I also am totally enamoured by daylilies. The new shoots are a great food along with stir-frying the buds and deep-frying the blooms. I laugh when I say this but I just found out this year that the new shoots of hostas are excellent for eating. I also LOVE chickweed in salads and on sandwiches (just like lettuce) and lambsquarter, to me, are so much better than spinach which is a good thing since I can't grow spinach very well. Maypops(passiflora incarnata)around here grow like a weed and the inside seed membranes can be run through a food mill for an excellent sauce, blends into juices and makes a nice sorbet, while the flowers and leaves are an excellent sleep aid. I'm trying not only to grow and forage herbs for food but for medicine and it is surprising what's out there. I use my red raspberry leaves for tea and since they have a lot of tannins help with diarrhea, as do blackberry leaves. There's just so much out there and when I started raising herbs 40 years ago did not know how much of this information had been lost through the generations. We're lucky to have a doctor that will recommend vitamins or supplements instead of prescriptions. We also let him know about the herbs we are taking or drinking.
